Easy Shortbread Biscuits

Hello everyone 🙂

Guess who’s finally doing a biscuit recipe?! I’ve always had an unhealthy obsession with lipsticks – as you’ve probably noticed – and I thought for my first biscuit recipe I’d start with the basics. Shortbread biscuits are quick, easy and very tasty with only three core ingredients (you can add flavourings as you wish).

INGREDIENTS;

125g butter (room temperature)

55g caster sugar

180g plain flour

METHOD;

1. Preheat the oven to 190C/Gas 5 and line a baking tray with parchment.

2. Cream together the butter and sugar until you have a smooth, creamy paste (as pictured above). Then add the flour and mix until you have a soft dough.

3. Then pop your dough onto a floured surface and roll it out to about 1cm thick.

This is where you get creative! You can go for traditional shortbread fingers, cute stars or whatever crazy shapes you desire.

4. Once you’ve cut out your biscuits place them on the baking tray, spreading them apart equally. Sprinkle them with caster sugar and then bake for 15-20 until golden brown.

Once they’re done they should look something like this.

I love how simple this recipe is and the end results are super cute and delicious. If you have kids, letting them decorate these with some glace icing would be a nice rainy day treat, or if you’re a coffee lover like me these go down very well dipped into a hot drink.
